Our organic restaurant - unaffected, natural, simple and honest - the best qualities for our ambitious cuisine. Certified, controlled and guaranteed organic at the highest level. Because as a certified organic restaurant, we use almost exclusively ingredients from organically controlled cultivation, free of genetic engineering and any chemical additives. Since the 90s, we have been focusing on organically produced food, seasonal organic cuisine and fairly traded products. Today, our products come mainly from Demeter and organic farms, preferably from the region, with some of which we have been working closely and trustfully for many years. Our guests from Hann. Münden, Göttingen and Kassel appreciate our excellent organic cuisine - as does the Varta Guide with its Varta Tip for the kitchen and the Guide Michelin with its Bib Gourmand and the Falstaff counts us among the 450 best inns in Germany.
Our cuisine is ambitious. Often surprising. Always intense and simple. Many guests and friends already know that we really like good meat. But the word is spreading more and more that we are also very happy to live out our vegan ambitions to the full.
The ambience of the FLUX restaurant is inspired by the same ideas as the cuisine: simplicity and sophistication, naturalness and honesty. Tables and floors are made of solid oak from sustainable forests. The chairs are by Team 7, the fabrics by Kvadrat. Everything flows, even the water in the walls: The walls are ecologically plastered with clay to bring the sophisticated ecological wall heating or cooling with a water circuit within the walls to full effect.
